This is a senior leadership role overseeing a sophisticated and diverse culinary operation spanning multiple restaurants, private dining, events, in-room dining and an extensive collection of luxury private villas. The successful candidate will lead a talented team of specialist culinary leaders across Thai, Italian, Mediterranean and Mexican cuisine, alongside Pastry and Villa Chef teams.

The role calls for a chef who combines exceptional culinary credentials with inspiring leadership, commercial discipline and a genuine passion for highly personalised guest experiences.

The Opportunity

Reporting into the senior Food & Beverage leadership team, the Executive Chef will shape and deliver the resort's overall culinary vision, ensuring that every dining experience reflects the highest standards of quality, creativity and consistency.

You will lead and develop a multicultural culinary team, working closely with individual Chefs de Cuisine to encourage creativity and authenticity while creating one cohesive kitchen culture.

A significant part of the role will also focus on the resort's private villas, ensuring guests receive an entirely personalised dining experience delivered with discretion, flexibility and attention to detail.

Key Responsibilities

  • Lead the culinary vision and day-to-day operation across all restaurants, events, private dining, in-room dining and villas.
  • Oversee a team of specialist Chefs de Cuisine across multiple international cuisines, together with Pastry and Villa Chef teams.
  • Develop and mentor culinary leaders, encouraging creativity while maintaining consistently high standards and accountability.
  • Build a collaborative and inclusive kitchen culture across expatriate and local teams.
  • Ensure exceptional standards of food quality, flavour, presentation and consistency throughout the resort.
  • Work closely with Food & Beverage leadership to ensure menus complement each outlet's concept, atmosphere and service experience.
  • Develop and maintain strong relationships with suppliers and Procurement, balancing premium international products with the best available local ingredients.
  • Oversee menu development, recipe specifications, plating standards, food cost, purchasing, inventory and waste management.
  • Lead the recruitment, training and development of Villa Chefs delivering highly personalised dining experiences across the resort's private villas.
  • Ensure the culinary team can confidently respond to bespoke menus, dietary requirements, celebrations and individual guest preferences.
  • Maintain the highest standards of food safety, hygiene and sanitation, including HACCP compliance.
  • Drive succession planning and develop a strong pipeline of future culinary leaders.
  • Maintain a visible presence within the operation, engaging with guests and responding personally to feedback and individual preferences.

The Ideal Candidate

You will be an accomplished Executive Chef or senior culinary leader with a strong background in ultra-luxury hotels, resorts or internationally recognised hospitality environments.

You will bring:

  • Significant experience leading complex, multi-outlet culinary operations at luxury or ultra-luxury level.
  • Broad international culinary knowledge and the confidence to lead specialist chefs across different cuisines.
  • Proven experience managing large, multicultural teams, ideally within a resort, island or remote environment.
  • A strong track record of developing senior chefs and building high-performing culinary teams.
  • Exceptional standards in food quality, presentation, consistency and guest experience.
  • Strong commercial understanding, including food cost, labour, procurement, inventory and waste management.
  • Experience with private dining, villa operations or highly personalised guest experiences would be advantageous.
  • A hands-on, highly visible and inspirational leadership style.
  • The ability to balance creativity with structure, commercial discipline and operational excellence.
  • A genuine passion for creating memorable, highly personalised dining experiences.
